  1. Diana says:

    As long as he likes his meat, eating vegetarian all the time will never satisfy him. So, try to make a meat side occassionally just for him while you both enjoy the vegetarian dish.
    Here are a few I hope you will both enjoy:
    Corn Casserole
    INGREDIENTS
    * 2 (8 ounce) packages cream cheese
    * 1 cup butter
    * 5 (15 ounce) cans white corn, drained
    * 1 (12 ounce) jar diced jalapeno peppers
    DIRECTIONS
    1. Preheat oven to 350 degrees F (175 degrees C).
    2. Place cream cheese and butter in a microwave safe 9×13 inch baking dish. Microwave on high until butter has melted and cream cheese has softened, 2 to 3 minutes.
    3. Mix white corn and diced jalapeno peppers with the butter and cream cheese.
    4. Bake in the preheated oven 30 to 35 minutes.
    Tangy Vegan Crockpot Corn Chowder
    INGREDIENTS
    * 2 (12 ounce) cans whole kernel corn
    * 3 cups vegetable broth
    * 3 potatoes, diced
    * 1 large onion, diced
    * 1 clove garlic, minced
    * 2 red chile peppers, minced
    * 1 tablespoon chili powder
    * 2 teaspoons salt
    * 1 tablespoon parsley flakes
    * black pepper to taste
    * 1 3/4 cups soy milk
    * 1/4 cup margarine
    * 1 lime, juiced
    DIRECTIONS
    1. Place the corn, vegetable broth, potatoes, onion, garlic, red chile peppers, chili powder, salt, parsley, and black pepper in a slow cooker; cover. Cook on Low for 7 hours.
    2. Pour the vegetable mixture into a blender, filling the pitcher no more than halfway full. Hold the lid of the blender with a folded kitchen towel and carefully start the blender using a few quick pulses before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the mixture in the cooking pot. Once everything has been pureed, return it to the slow cooker. Stir the soy milk and margarine to the mixture; cook on Low for 1 hour more. Add the lemon juice to serve.
    Curried Tofu Salad
    INGREDIENTS
    * 1 (12 ounce) package extra firm tofu, drained and cubed
    * 1 teaspoon curry powder
    * 1 tablespoon lemon juice
    * 2 tablespoons mayonnaise
    * 1 tablespoon distilled white vinegar
    * 1/4 teaspoon crushed red pepper flakes
    * 1 tablespoon soy sauce
    * 1 large carrot, grated
    * 1 chopped red bell pepper
    * 1/4 cup peanuts
    * 1/4 cup pitted dates
    * 1 clove garlic, chopped
    * 1 large green onion, chopped
    DIRECTIONS
    1. Preheat an oven to 350 degrees F (175 degrees C). Place tofu on a lightly greased baking sheet.
    2. Bake tofu in the preheated oven for 25 minutes, stirring halfway through the cooking time. Remove tofu from the oven and allow to cool.
    3. Mix curry powder, lemon juice, mayonnaise, vinegar, red pepper flakes, and soy sauce in a small bowl. Set aside. Combine tofu, carrots, red pepper, peanuts, dates, garlic, and green onion in a large bowl. Top with sauce and mix thoroughly. Chill for an hour before serving.
    Note:
    You can make this salad without adding the tofu. Upon serving, add tofu for you and tuna or chicken for your father.
    Spinach and Strawberry Salad
    INGREDIENTS
    * 2 bunches spinach, rinsed and torn into bite-size pieces
    * 4 cups sliced strawberries
    * 1/2 cup vegetable oil
    * 1/4 cup white wine vinegar
    * 1/2 cup white sugar
    * 1/4 teaspoon paprika
    * 2 tablespoons sesame seeds
    * 1 tablespoon poppy seeds
    DIRECTIONS
    1. In a large bowl, toss together the spinach and strawberries.
    2. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.
    I hope I have helped….

  2. Feisty says:

    If you will eat cheese, this one will satisfy both!
    Spinach & Cheese Manicotti
    1 pkg ricotta cheese (low fat or regular)
    1 pkg frozen spinach — drained AND squeezed
    1 pkg shredded mozzarella cheese
    1 pkg shredded cheddar cheese — or pick any other flavor you like!
    1 pkg manicotti pasta
    1 jar spaghetti sauce (or make some if you prefer)
    A couple tablespoons Italian seasoning.
    Cook manicotti to firm (al dente). I add a bit of oil to the cooking water but no salt.
    At the same time …
    Mix the ricotta cheese, 1/2 the other cheeses, Italian seasoning and spinach together.
    Rinse manicotti in cold water, drain and pat dry. Stuff with cheese mixture.
    Put a bit of the spaghetti sauce in the bottom of the pan — just enough to cover it. Layer in stuffed manicotti. Top with rest of sauce and rest of cheese. Bake 350 for about 1 hour.
    Serve with garlic bread.
    My hubby and I are both omnivores and we both really like this. Sometimes I’ll use a meat sauce when I make it.

  3. Paddy 1969 says:

    Yes, crumble a block of tofu, add it to a fried onion (with a bit of grease still in the pan) add a little bit or more of some package gravy mixture to which some cold water has been added, stir everything, cover and heat. Usually the turkey/chicken gravy is best, there is no meat ingredients in it, but it does contain milk, and MSG, so you might want to dilute it a bit by adding more flour. Serve with potatoes or rice. Another, have him try chilli beans, or curries (chickpea or lentil) the spices in them are healthy, are good for digestion. Try adding more oil, herbs, or other flavours, to the food, as these will increase the good taste , and make your father crave for more ! Try soysauges, I think the recipe is on the internet, they probably taste as good as “real” sausages.

  4. Make a lovely thick bean soup, rich w/ veggies and use a meat analog like veggie sausage or seitan for the “meat”. If you don’t tell your dad what it is, he’ll never know. You can make a wonderful Shepherd’s Pie the same way. There’s so many Vegan/vegetarian “meat” products out there, that it’s just not difficult anymore to make main dishes that can fool the most serious meat eater.

    This is just a side dish, but it’s quite filling and very healthy. I love it.
    It’s non-fat cornbread. From fatfree.com
    “Cook it about 10 minutes
    longer than stated to dry it out enough for my taste. But its great and
    freezes well.
    - – - –
    I altered the recipe by adding canned creamed corn
    (which you know is just corn – there is no cream).
    AMAZING CORN BREAD
    1 cup cornmeal
    1/2 cup whole wheat flour
    1 TB baking powder
    1-3 TB sugar, depending on taste (I use 3 TB)
    1/2 tsp. salt
    1 apple made into applesauce or 1/3 cup prepared applesauce
    3/4 cup skim milk
    2 egg whites
    1 15 oz. can creamed corn, optional (I do use it)
    Preheat oven to 425 degrees f. Pam spray an 8″ X 8 ” cake pan or equivalent
    iron skillet or other oven-proof pan and put into the oven to preheat. Mix
    all ingredients, pour batter into heated pan and bake for 20 mins. (Can be 30 minutes.. test cornbread with a fork and see if the fork comes out clean after poking bread.)
    Freezes well – if it lasts that long. Refrigerate any leftovers and serve
    cold or it also improves when reheated for about 15 minutes at 350 degrees
    and gets crisp.
    *****
    One of my favorite recipes and I get compliments when I make it for friends.

    hey, pretty cool ur Dad is for trying all that veggie stuff!!! and good for you, it is REAL good for his heart health!!! o.k. i have a couple of suggestions. first – ever hear of milk curd? or paneer? it is like tofu but made with cow milk instead of soy milk. it is much heavier than tofu & very filling. you can usually purchase curd/paneer at a Asian/Indian market & or health food store. most folks who like meat love this curd, you can brown it on both sides serve a large slice/steak on side with a sauce of some kind – EVEN BBQ sauce, or brown it & make a sandwhich out of it. serve a baked potato & steamed veggies, with a side salad & i am pretty sure he will be full, oh & happy. hope this helps & good luck!!!! =>:)

  7. :) says:

    well you can always make dishes like spaghetti, and make some meatballs or hamburger meat on the side so that he can add that.

  8. My brother-in-law is a big meat fan and a fussy eater. I don’t have to deal with him on a regular basis as I live in a different city from my family. However, he did like the flavor of Tofurkey sausages and might have liked the texture had my mom not overcooked them. The Italian variety is really good with pasta.
    There are veggie “meatballs’ available for sale at many natural foods stores.
    You can make your own seitan (PM me and I’ll give you tips) and use that in recipes calling for meat.
    And check out “The Vegetarian Meat and Potatoes Cookbook” by Robin Robertson. VegWeb also has tons of recipes. Maybe find some casserole recipes?
    If all else fails, cook your veggie meals, and he can cook his meat and have it with the veggie sides.
