  1. I’ve gotten some of my favorite vegetarian/Vegan recipes from a couple of Yahoo groups I belong to. “Vegetarianslimming”are healthier recipes and “vegetarianspice” has spicy recipes. They have a large archive of recipes sorted by side dish, light lunch, dinner, dessert, etc. I also have a couple of cookbooks. They’re nice because they have pictures of the recipes, but a lot of the recipes aren’t mad with things you just have lying around the kitchen. If you find a really good vegetarian cookbook, please let me know :)

You’re in luck. There’s a million different healthy and delicious things she can eat. Vegetable stir fries, and bean and rice burritos can be an easy start. Lasagna, vegetable stew, and fake meats from the grocery store can be tasty. Whole grains like millet, barley, and brown rice provide protein as well.
http://www.vegcooking.com is one of many great websites with free recipes.
She won’t be stuck with burritos and pizza if you experiment, and you’ll probably discover cool new things to do with your old favorites that you’ll love to eat too!
Good for you supporting her. It’s challenging at first, but you should be proud of yourself for being so positive.
My mother supported me when I became Vegan, and it opened a whole new world of food for us.
