Is There Any Vegetarian Recipes That Use Star Anise?

I bought the star anise because it looked pretty, and I thought it would be useful as I’d seen it in recipes. I was eating meat at the time but now I don’t. I think the recipes I saw it in must have been meat only ones because now I don’t know what to do with it :(
I’m so curious about it and want to try it!

    I usually see it used in Chinese food. You could cook with Chinese-style vegetables and rice or noodles. I have done it before and it was pretty good.
    My wife is from India and I have seen star anise used in a rice or noodle pudding at least once. It’s called kheer; I might be spelling it wrong.
    I don’t think you can actually eat it. It seems to work best as a flavoring when you add it to cooking and take it out again before you eat. Kind of like some people might do with bay leaf or cloves.

    The dishes I am familiar with are not vegetarian. I did see a couple of vegetarian dessert recipes in spice books. If you are interested in these, I can post them –but, I have not made the dishes. By the way, I am a lover of vegetarian food, but not vegetarian. As I learn from various sources, I do try to add more and more vegetarian menus to our lives. I like the idea of using asian veggies and noodles with the star anise — think what you do is to make the vegetable broth with the star anise to add flavor and then do up whatever veggies or noodles make sense to you. I truly hope this is helpful to you. I might not get to posting immediately, but will try to do so soon. Also, if I find any resources or references, I’ll include those.

    You can use star anise to replace fennel seed in any vegetarian recipe. It should come out nicely. Just remove the star anise at the end of cooking or remove the seeds from the pods and cook them in the dish. Voila.

    It's easy.
